Beet Pickles

1 qt. sliced beets
2 c. sugar
1 1/2 c. vinegar
1/2 c. water
1/4 tsp. canning salt
Stick cinnamon
Wash beets thoroughly and cut stems off 1 inch from beet. Place in boiling water until skins loosen (approximately 10 minutes but size of beets varies time). Cool enough to handle and gently, with hands, push skin and stub of stem away to have a shiny, colorful beet. Bring sugar, vinegar, water and salt to a boil. Add sliced beets, stick cinnamon and simmer for 20 minutes. This makes 1 quart.
