Sandbakkels

1 c. butter
1 c. sugar
1 egg yolk
2 1/2 c. flour
5 tsp. almond extract

Cream butter and sugar, add beaten egg yolk, almond extract, and blend well. Reserve 1/2 c. flour to dip balls of dough in. Add 2 c. flour to creamed mixture and mix well. Make balls of dough size of walnut, dip in reserved flour, press into small metal molds. Place filled molds on cookie sheet, bake 375 degrees, approx. 7 min. or until just lightly browned. Remove and cool. Gently tip molds to remove. Do not wash molds, as this will make sandbakkels stick; just wipe out thoroughly.
