Quicker Chicken and Dumplings

4 c. chicken broth
1/2 c. sliced carrots
1 tsp. dried parsley
2 c. biscuit/baking mix
2/3 c. milk
1/2 c. sliced celery
1 bay leaf
3 c. cubed, cooked chicken
1/4 tsp. thyme
1/2 tsp. parsley
In 5-quart kettle combine broth, celery, carrots, bay leaf, parsley. Bring to a boil. Meanwhile, prepare dumplings: Combine biscuit mix, thyme, 1/2 teaspoon parsley. Stir in milk. Add chicken broth. Return to boiling. Drop dumplings by tablespoonful onto boiling broth. Cook uncovered for 10 minutes. Cover. Cook 10 more minutes. Makes 4 delicious servings.
