Norwegian Lefse

10 potatoes
1 c. sour cream
1 T. butter
1/2 tsp. pinch of salt
2 T. sugar
1 1/4 to 1 1/2 c. flour or enough to roll lefse
Boil potatoes. Mash fine. Heat cream and add salt, butter, and sugar. Beat until light. Cool. Add flour, just enough to roll out. Roll out on floured pastry cloth, using batter size of a bun and rolling out thin. Bake on lefse grill or pancake griddle until lightly brown on both sides.
