Apple Nut Bars

2 egg whites
1/2 tsp. vanilla extract
1 tsp. baking powder
2 c. chopped unpeeled tart apples
1.4 c. chopped pecans
2/3 c. sugar
1/2 c. all-purpose flour
In a bowl, whisk egg whites, sugar and vanilla for about 1 1/2 minutes. Add flour and baking powder; whisk for one minute. Fold in the apples and pecans. Pour into an eight inch thick square baking pan coated with nonstick cooking spray. Bake at 350 degrees for 25 to 30 minutes or until bars test done. Cool. Yield: 1 dozen.
